I need some advice on the best way to fry an egg. For some reason I always seem to have issues - I don't know if the pan I am using it too small or what.
I have to use extra virgin olive oil to coat the pan, because they are not teflon and the spray stuff like Pam will ruin them. I don't want to use butter for health reasons.
The egg always seems to stick and I can never flip it without breaking the yolk.
I would like some advice on the temperature, etc - I mean, I really should know how to fry an egg!

I usually use butter, but occasionally I'll use a little bit of Canola oil or coconut oil. It really does not take much of either of these. I used to have problems also until I got a really good non-stick pan. It really makes all the difference in the world. Sometimes I don't even use any oil. You really need a little bit, but not much at all if you have a good non-stick pan. It is also a great investment because they last longer, are easier to clean, and your meals come out great. I usually use a medium-low temperature: 4 or 5 on the stove.

The mistake that most make in cooking in general is not allowing the egg to cook completely. If your using any type of oil or a no-stick pan allow your eggs to cook...and don't cook on to high a temperature. Be patient! When the edges are completely cooked, gently, slide a spatula under the egg. Works every time for me.
